Lemon zest

Lemon juice

Hackleback or Paddlefish Caviar

Pasta of your choice 


Parmesan or pecorino 


Cook pasta (spaghetti, linguini or your preference) in a large pot of boiling, salted water and cook per package instructions until pasta is al dente

Using vegetable peeler remove two long (2 inch) strips of lemon zest and slice into thin strips (for serving).

In pan add 3 parts lemon juice, butter and parmesan or pecorino cheese whisking together and cook on low heat until sauce thickens slightly.

Add pasta to the lemon sauce and mix slowly.

Season with salt and pepper and garnish with caviar (Paddlefish or Hackleback) on top.
