What is Caviar?

Caviar is simply the roe of the sturgeon that is slightly salted using traditional malossol (a Russian word that literally translates to "little salt") methods.

What Does Caviar Taste Like?

Caviar has flavors that associate with the sea, a touch of salt, the delicate flavor of fresh fish, sometimes smooth and nutty, full of sweet brine that delightfully pops in your mouth.

Caviar vs Roe

Caviar refers solely to roe (eggs) of sturgeon. Roe refers to the eggs of other fish species.

What Are The Benefits of Eating Caviar?

Is Caviar good for you? The answer may surprise you. 

While caviar was once strictly reserved for the royals, it’s now easily accessible to the masses; for good reason. Caviar is considered a nutritional powerhouse, offering an array of health benefits regardless of its size, color and taste.

How is Caviar Served?

Caviar is best served simply - whether on its own or placed on top of a blini with a dollop of creme fraiche. Top shelf caviar should be served as simply as possible to enjoy the individual flavor; no additional pairings needed. You should only use a mother of pearl, horn or bone spoon to ensure ideal flavor.

How Long Will My Caviar Last?

An unopened tin of caviar will stay fresh for up to three weeks between 28° - 34°F. Please do not freeze any caviar. Once opened, the caviar must be eaten within 3 days. 

What is Hybrid Caviar?

This designation refers to the crossbreeding of two distinct sturgeon species to create one sturgeon. The female species of the Huso dauraicus & male species of the Acipenser schrenckii make up our Hybrid Sturgeon.

Farmed vs Wild Caviar

In an effort to protect this endangered prehistoric species, as of 2004 under the direction of the United States Fish and Wildlife Authority wild caviar was declared illegal to import into the USA. In anticipation of this law many farmers from around the world created and perfected the art of sturgeon farming, to fill the void that was created by no longer fishing the Caspian Sea for the traditional Beluga, Osetra & Sevruga species. It is only from the United States that legal fishing of the wild Hackleback and Paddlefish are currently available, under the controlled fishing license program. Currently there are more varieties of sturgeon being bred vs wild which offers a more diverse opportunity for choice in flavor and color to those who truly enjoy this wonderful delicacy.
